JOURNEY TO FOOD FREEDOM

Can you think of a better combination other than peanut butter and chocolate? I didn't think so! These chocolate peanut butter rice crispy squares are delicious and come together in no time. 

Life is not what is was six months ago. Many of us are stressed and anxious. This is completely understandable. You may feel like simple tasks are difficult. Well, I am here to tell you that food choices should not be. You should be able to enjoy a treat without feeling guilt over your choice. I am all about living a life that is healthy and sustainable.  A life without treats is not healthy or sustainable  - in my opinion! I am not telling you to eat cookies and ice cream all day long, however eating cookies and ice cream from time to time will not derail you on your journey to a healthy lifestyle! 

For many years, I restricted myself from various foods. Dessert rarely passed my lips. I am actually not much of a cake fan, but candy and chocolate are my thing. I would restrict myself during the week and allow myself the “bad” food on the weekend. In my case, it was often wine gums or jujubes - yum! After consuming large amounts of candy, I would immediately feel guilt and remorse. I would feel sick both physically (a little too much sugar for my belly) and emotionally (guilt for eating this “bad” food).

Fortunately, I became exhausted with living this way. These thoughts were consuming far too much time in my life. Trust me when I tell you there is so much more to do with your life than constantly worry about food! I knew that I couldn’t keep living this way. It was affecting my relationships and my quality of life. I was tired of fearing calories, sugar, carbs, missing time at the gym – I knew I had to make some major changes if I wanted my life back.

I started to do the work. And I will be honest with you, it was work. It took many years for me to develop distorted views of food and my body. Surely, I would not get rid of them overnight. However, I did the work and am now at peace with food and my body. This doesn’t mean I do not have days where I struggle with food or body image - I am human, but I am so much better. I am now able to help other women who struggle with the same issues. Trust me when I tell you that you can get beyond this. There is life beyond food restriction and guilt. There is freedom!

Ingredients

3 cups brown rice crisps - I used Nature’s Path Koala Crisps

3/4 cup creamy natural peanut butter

1/2 cup honey or maple syrup

3/4 - 1 cup dark chocolate chips

Directions

  1. Melt peanut butter and honey in saucepan until creamy.

  2. Add to a bowl of rice crisps cereal. Stir well until combined.

  3. Press into an 8x8 parchment lined pan.

  4. Melt chocolate in the microwave or on the stovetop. Be very careful not to let it burn!

  5. Pour the melted chocolate over rice crispy mixture.

  6. Place in the freezer.

  7. Try your best not to eat it before the chocolate is set!
